Recipe: Sautéed Summer Squash with Lemon and Mint

Feel free to substitute zucchini in this easy, summer favorite. Looking for a more substantial dish? Toss the finished result with your favorite pasta and some fresh ricotta.

INGREDIENTS: 

  • 1-1½ lb. Summer Squash, well rinsed and sliced into 1/2 inch rounds
  • ½ cup Olive Oil
  • 3 tbsp Fresh Lemon Juice
  • 2 tbsp Fresh mint or summer savory, coarsely chopped
  • To taste Salt and Pepper

DIRECTIONS:

  1. Heat olive oil in pan on medium-high heat
  2. Once olive oil is heated, throw in the squash, plus salt and pepper to taste
  3. Stir constantly so that the squash gets a slight brown sear on the outside but doesn’t burn
  4. Sauté until squash is soft ( about 4-5 minutes)
  5. Remove from heat
  6. Garnish with fresh lemon juice and coarsely chopped mint
