Feel free to substitute zucchini in this easy, summer favorite. Looking for a more substantial dish? Toss the finished result with your favorite pasta and some fresh ricotta.
INGREDIENTS:
- 1-1½ lb. Summer Squash, well rinsed and sliced into 1/2 inch rounds
- ½ cup Olive Oil
- 3 tbsp Fresh Lemon Juice
- 2 tbsp Fresh mint or summer savory, coarsely chopped
- To taste Salt and Pepper
DIRECTIONS:
- Heat olive oil in pan on medium-high heat
- Once olive oil is heated, throw in the squash, plus salt and pepper to taste
- Stir constantly so that the squash gets a slight brown sear on the outside but doesn’t burn
- Sauté until squash is soft ( about 4-5 minutes)
- Remove from heat
- Garnish with fresh lemon juice and coarsely chopped mint
